Zucchini and Potato Pie

Serves 6

Ingredients:

  • 3 medium potatoes (scrubbed, unpeeled)
  • 2 Tbsp margarine
  • 2 eggs
  • 8oz of cheese (cheddar, mozzarella, jack, or all) diced fine or shredded
  • 1/2 cup grated Parmesan cheese
  • 1 large zucchini (grated)
  • 1/4 cup or less of onion (according to taste)
  • 1/4 tsp pepper
  • 2 Tbsp bread crumbs

Directions:

  1. Cook potatoes in their skins for 25-30 min until tender. Drain and smash.
  2. Preheat oven to 400ºF.
  3. Butter a 9” pie pan with 1 Tbsp margarine and sprinkle with 1 Tbsp bread crumbs.
  4. Stir remaining ingredients except bread crumbs and margarine in with the potatoes.
  5. Fill pie pan with potato mixture, smoothing the top.
  6. Sprinkle with remaining 1 Tbsp bread crumbs and dot with 1 Tbsp margarine.
  7. The pie can be refrigerated up to 8 hours before baking if desired.
  8. Bake for 30 min (45 if refrigerated) until the pie is puffed and golden.
