Dad's Lasagna

  • 2 lb ricotta cheese
  • 16 oz mozzarella
  • 1/2 cup grated parmesan
  • 1 lb sweet Italian sausage
  • 1 lb ground beef
  • 1 cup chopped onion
  • 1 28 oz can whole tomatoes
  • 2 6-oz cans tomato paste
  • 2 1/2 cups water
  • 1 tsp. crushed basil leaves
  • 1 tsp. salt
  • 1 chopped garlic clove
  • 1 beaten egg
  • 1/2 tsp. thyme
  • 1 tbls. dried parsley leaves
  • 1/4 tsp. pepper
  • 1 10-oz pkg lasagna noodles

  1. Remove sausage from casing. Crumble and brown sausage and ground beef in a large saucepot.
  2. Add garlic and onion. Saute until tender. Drain excess fat.
  3. Add tomatoes and paste. Break tomatoes. Add water and mix.
  4. Add oregano, basil, thyme and salt. Stir, heat to boil. Reduce heat and simmer 35-40 min. Stir occasionally.
  5. In bowl, combine ricotta and parmesan cheeses, beaten egg, parsley and pepper. Blend.
  6. In lightly buttered 13X9X2 baking dish, place 4 lasagna noodles (overlapping). Top with 1/2 ricotta mix, 2 cups sauce, and 1/3 mozzarella. Repeat layers twice ending with noodles and sauce on top. Sprinkle parmesan on top.
  7. bake in preheated 350 deg. oven for 35-45 min. or to serving temperature.

Note: Allow additional 15-20 min. more when baking cold.
