===== Zucchini and Potato Pie ===== Serves 6 Ingredients: * 3 medium potatoes (scrubbed, unpeeled) * 2 Tbsp margarine * 2 eggs * 8oz of cheese (cheddar, mozzarella, jack, or all) diced fine or shredded * 1/2 cup grated Parmesan cheese * 1 large zucchini (grated) * 1/4 cup or less of onion (according to taste) * 1/4 tsp pepper * 2 Tbsp bread crumbs ---- Directions: - Cook potatoes in their skins for 25-30 min until tender. Drain and smash. - Preheat oven to 400ºF. - Butter a 9" pie pan with 1 Tbsp margarine and sprinkle with 1 Tbsp bread crumbs. - Stir remaining ingredients except bread crumbs and margarine in with the potatoes. - Fill pie pan with potato mixture, smoothing the top. - Sprinkle with remaining 1 Tbsp bread crumbs and dot with 1 Tbsp margarine. - The pie can be refrigerated up to 8 hours before baking if desired. - Bake for 30 min (45 if refrigerated) until the pie is puffed and golden.
